It is made of three items of bati, dal, and churma. Dal is lentils, bati is a baked wheat ball, and churma is powdered sweetened cereal. Churma is a popular delicacy usually served with baatis and dal. It is coarsely ground wheat crushed and cooked with ghee and sugar. Traditionally it is made by mashing up wheat flour baatis or left over rotis in ghee and jaggery. Most of their food items include milk or milk products in order to reduce the use of water. They use pure ghee in their cuisine that gives a completely different and amazing flavoraroma.

1) Bajre ki Roti
Simple Rajasthani bread made out of a local cereal called Bajra. This was my favorite amongst all the breads here –  so much that I ended up eating it almost every day. Teaming it up with any of the dishes below can really make the entire meal scrumptious.

2) Gatte ki Sabzi
Gatte is the local name of black gram flour (besan) dumplings. The curry or sabzi is made from a perfect combination of curd and spices, resulting in a lip-smacking tangy taste. This is a famous traditional food of Rajasthan in which the besan balls are mixed with rice and spices to cook gatte ka pulao or khichdi – equally popular and lip-smacking.

3) Ker Sangri
Ker sangria is a famous Rajasthani food, quite popular in the desert districts of Jaisalmer, Bikaner, and Jodhpur. It is an amalgamation of beans and berry (ker berry and sangria bean) and is stir fried with local spices.

4) Ghevar
Till I visited Rajasthan, I always believed that there was only one type of Rajasthani Ghevar – the sweets the state is known for. It is amazing how many different types are there. Paneer, malai, Kesar are some unique flavors. This sweet is extremely popular during festivals like Sankrantiand Teej.

5) Mawa Kachori and Pyaz Kachori
Rajasthan is famous for kachori and mawa and pyaaz kachori top the list. Mawa kachori is made from dry fruits & khoya, deep fried, and then dipped in sugar syrup while pyaaz kachoris are filled with the stuffing of onions, potatoes, and spices. Both are extremely famous as the street food of Rajasthan.

6) Lassi
Lassi or thickened buttermilk? I mean, what is so special about it. It isn’t Rajasthani by origin but I make a mention of it here because I found so of the most unusual flavors and amazing tasty lassi here. Dry fruit lassis are a definite recommendation – especially, the Kesar Pista and Badam ones.  The Rosemilk ones were a little too sweet for me, but the kids totally loved them. And if you want to try an even richer lassi – try the Malai one.
